Dietitians of Palm Valley Partner with Dolphin Athletics

JACKSONVILLE, Fla. – The life of a student-athlete is hectic, and healthy eating habits are a must. Through partnership with Dietitians of Palm Valley, Mindy Black and Sammy Pappas serve as the official dietitians of Jacksonville University Athletics, providing a number of services to assist Dolphin student-athletes off the field and in the kitchen.

Currently serving as the Director of Performance Nutrition for the Jacksonville Jaguars, Black hopes to educate Dolphin student-athletes to maximize their abilities to perform at the highest level.

"It is exciting to continue our partnership with Mindy Black," said Doug Frye, Director of Sports Medicine at JU. "Nutrition is important for performance as well as injury recovery, and having Mindy and Sammy work with us helps our student-athletes, as well as coaches, in meal planning for games, practices, and daily activities. We look forward to building this relationship as we continue to grow our medical services for our student-athletes."

In correlation with the JU strength and conditioning and sports medicine staffs, Black and Pappas will work to provide comprehensive and individualized plans to achieve the goals of each student-athlete.

Individual diet assessments with special attention to body fat reduction, lean body mass (muscle) increases, and specific dietary needs along with one-on-one meetings with student-athletes twice a month highlight the incredible level of care that Black and Pappas provide. Following an initial assessment of a student-athlete's diet, supplement use counselling is also offered with regards to the safety, efficacy, and legality of supplements.

Black graduated from the University of Florida with a B.S. in Food Science and Nutrition and a Masters in Exercise Physiology. She has worked as a sports nutritionist for the University of Florida Athletic Association and independently has worked with numerous elite, professional athletes. She is also a Board Certified Specialist in Sports Dietetics through the American Dietetic Association.

Pappas graduated from Penn State University with a B.S. in Nutritional Sciences and a minor in Kinesiology. Specializing in individual counseling and grocery store tours, she joined Dietitians of Palm Valley (formally known as Mindy Black Nutrition and Lifestyle Management) after working in Penn State's sports nutrition department and serving as a retail dietitian in ShopRite supermarkets.  She is a registered dietitian and a licensed dietitian/nutritionist in the State of Florida.
